Bob McDermott is the owner of one of Chicago’s best known and longest running craft beer bars, The Beer Bistro. The space’s unassuming “neighborhood joint” feel does little to betray the bar’s deep craft beer and spirits list, in-depth knowledge of their products and their penchant for unique and limited-release beverages. Bob and his team are all about showing their patrons something new, in a completely unpretentious fashion. As he puts it, “Come on in, grab a seat and start drinking. That’s Beer Bistro. We want you to come here and have a good time." We caught up with Bob to learn about his inspirations, his philosophy on education and to watch him make two delicious Parce cocktails: “El Burro” and “The Muse."
